I've been experimenting in the kitchen again...

So, last weekend I had lunch at a Whole Foods in downtown Portland with a friend and we split the most heavenly wheat-free cookie for dessert. I was intrigued that a wheat-free cookie (as in NO FLOUR!!!???) could actually work and taste good and was inspired to make a version of my own so ...

here's the recipe folks, by popular demand from all who have tasted them (and a few who want to)!



Teresa’s Flourless Concoction Cookies
3 eggs
1 cup packed brown sugar
1 cup white sugar
1 tsp vanilla
2 tsp baking soda
½ cup butter, softened
1 1/3 cups peanut butter
4 ½ cups old-fashioned oats
½ cup semi-sweet chocolate chips
½ cup butterscotch chips
½ cup chopped pecans
½ cup shredded coconut

Preheat oven to 350 degrees F. Lightly grease cookie sheets.
Cream butter, peanut butter, and sugars together until well mixed.
Add eggs, one at a time. Add vanilla.
In a separate bowl, mix together oats and baking soda then stir into batter.
Add all the yummy mix-ins (the sky’s the limit here people – leave out the nuts…change the chips to all chocolate…add m-n-m’s…but I think my combo is pretty yummy!)
